Im about to make some breeding cabs is it okay to use 16mm white melamine for the cabs or is ply wood better?

Perfectly fine. Easy to clean too. I have a lot made of the same thing.

As Kaz says. Plywood is fine also but give it a good sealer and a couple coats gloss paint to make it easier to clean. I find plywood lighter to use.
