My parents are comming over for tea this Thursday and I plan to cook a roast. We often have roasts at home but never seemed to be able to get the perfect roast potatoes (and pumpkin for that matter)... Any Ideas??? I love it when they're cruchy on the outside!!! Please help me!!! :o

You can cheat and use the frozen oven roasted potatoes LOL ..

 

or boil them first - drain the water of them and rub butter on them and cook the that way they are soft and crunchy

 

same as pumpkin boil first with skin on it and bake YUM YUM i'm comming for dinnner too

My mum makes her roast potatoes as chunky chips and adds 1/2 a cup of white wine to the pan, they are AMAZING! I can ask her for more info if you like. Otherwise I parboil them first so they are cooked through and then put them in a pot with a little butter or olive oil and shake them up so that it roughens the outside of them, then into a hot baking pan with olive oil ;)

How do I boil potaotes?!?!?!?!?!? :blink: lol. I usually cook them in the microwave in their jackets or roast them... Do I peel or not? How long to boil for... add after water is boiled or before... then, how long to roast for after boiling???

well you can boil with and without skins, boiling will make the skins possibly come off, depends how soft you want them if you want them to stay together and not mush like for mashed potatos I suggest 10 mins.

Yeap boil them ( cut into Nice size bits)

10 - 15 mins without skins ( you can add stuff to the water ie garlic, rosemary etc) to flavour them .....
