Posted June 24, 200817 yr Anyone have a recommendation for the best way to freeze cake(heavy mud cake) and also how long it is okay to freeze it for. I know one year we froze a mud cake after christmas and it actually tasted moister and richer after it had been dfrosted so I assume it is okay but I can't remember how we froze it or how long for. June 24, 200817 yr Wrap it in waxed paper and wrap again in foil and then plastic. Can be frozen for months. I used to do my Christmas cakes in advance and freeze them this way

June 24, 200817 yr Spot on kaz ... the secrect is in the Wax paper !!!!!! then Foil then cling wrap .... If it is muffins, I wouldn't risk it wrapping them on a tray !! the air will still be in there you'll need to wrap them each
June 24, 200817 yr Author Well I was only planning on freezing them for a couple of weeks and I have 8 weeks before I need them so maybe I'll put a trial batch in the freezer now, take them out on three weeks and see how they are and then decide whether I need to wrap individually or whether I can get away with packing them tightly on a tray.
June 24, 200817 yr I would wrap individually like Neat says too. Otherwise ice crystals will form and they will get freeze dried.

How's this sound then Have some squares of waxed paper and foil cut up. Pick up each muffin, quickly wrap with each type of paper and into a ziplock bag. Large ziplock bag should fit a dozen or more in .........easy
June 24, 200817 yr Author That's not too bad I guess, I always have heaps of jumbo size zip lock bags for work so no problem there. Now can you tell me is waxed paper the same thing as grease proof paper (baking paper) as I've never heard of waxed paper. If I can remember correctly I think we wrapped the chrissy cake in a couple of layers of tinfoil.

June 24, 200817 yr Author Did I mention there will be sauce The muffin cases are ceramic and in the bottom of each one there will be a little hidden reservoir of choccy sauce so when they put their muffin in the microwave for 20 seconds they will get drippy, choccy yumminess with their cake.
